Certain health experts would like us to believe that cheese should be enjoyed “in moderation.” We respect their credentials. We also notice that none of them have ever looked sad while holding a bowl of warm queso. Our own internal research, conducted daily across seven Tennessee dining rooms, shows a clear pattern: queso arrives, smiles follow. The sample size is enormous and the results have been consistent since the day we opened.
Calcium, Friendship, and Other Scientific Facts
Cheese is packed with calcium, and calcium builds strong bones. That part is real science. Here is the part our team added through years of careful field work: a shared bowl of queso builds strong friendships, too. Nobody has ever bonded over a plate of celery. How the Legendary Queso Gets Made
Our kitchens start early. Every batch of queso is made the same way it has been for years: slowly, carefully, and with the understanding that half of Chattanooga will riot if we change the recipe. It anchors our menu, tops half the dishes on it, and disappears from tables faster than anything else we serve.
