Mexican Appetizers and Dips

Be the Tailgate Hero, Bring Mexican Food

Everyone loves Mexican food. As football season rolls around, be the hit of the tailgate and bring snacks sure to please any crowds. Wow your guests with these tasty appetizers and dips.

Taco Pizza Rolls

½ lb. ground beef
1 can of pizza dough
2 tbs. taco seasoning mix
3 tbs. water
1 c. Mexican cheese blend

Preheat the oven to 400 and lightly grease the baking sheet. In a medium skillet, cook and brown beef. Drain and add taco seasoning and water and cook for an additional 2-3 minutes. Set aside.

Unroll pizza dough onto a flat surface and press it into a rectangle. Evenly spread taco meat and cheese across pizza dough. Starting with the long end, roll dough to form a tight roll. Use a serrated knife to slice the dough into 18 rolls.

Place on a baking sheet and bake for 10-12 minutes or until golden brown. Serve immediately. Add toppings such as lettuce, sour cream, salsa, and guacamole as desired.

Mexi Dip

2 c. mexicorn, drained
1 c. chopped green chiles
1 bell pepper, chopped
3 green onions, chopped
2 jalapenos, chopped without seeds
2 c. shredded cheese
1 c. sour cream
1 c. mayonnaise

Combine all ingredients in a large bowl and chill. Serve with tortilla chips or Fritos.

Rotel Dip

1 lb. Velveeta Cheese
1 c. Original Rotel
1 lb. spicy ground sausage
Tortilla chips or Fritos

Turn the crockpot on high to preheat. Cook and brown sausage. Drain. Place meat and Rotel (juice and all) in the crockpot. Cut Velveeta into cubes and add to crockpot. Stir well. Turn crockpot to low. Cover and simmer. Stir frequently until the cheese is completely melted.
